Mushroom Soup

Ingredients

  • 1.5 lbs Closed Cup Mushrooms, chopped
  • Olive Oil
  • 1.5 oz Plain Flour
  • 0.5 pt Reduced Salt Vegetable Stock
  • 1 pt Skimmed Milk (or suitable alternative)

Method

  1. Clean and roughly chop the mushrooms.
  2. Soften the mushrooms in a little splash of olive oil.
  3. Add all other ingredients.
  4. Bring to boil slowly, cover and simmer for 20 mins.
  5. Season to taste - watch out for adding salt!
